INGREDIENTS:-


for sheet / wrapper:

▢2 cup maida / plain flour
▢2 tbsp corn flour
▢½ tsp salt
▢2½ cup water

for stuffing:

▢2 tbsp oil
▢3 clove garlic (finely chopped)
▢2 chilli (finely chopped)
▢2 tbsp spring onion (chopped)
▢½ onion (sliced)
▢1 carrot (julienne)
▢2 cup cabbage (chopped)
▢5 beans (chopped)
▢½ capsicum (chopped)
▢2 tbsp vinegar
▢2 tbsp soy sauce
▢2 tsp chilli sauce
▢¼ tsp pepper powder
▢½ tsp salt

other ingredients:

▢½ cup maida paste (for sealing)
▢oil (for frying)

INSTRUCTIONS:-

Preparing the Wrapper: 

Step 1 : Mix together 2 cups of maida, 2 tablespoons of corn flour and ½ teaspoon of salt. 

Step 2 : Gradually add 2 ½ cups of water, stirring it until you get a lump-free batter. 

Step 3 : Grease a pan and pour a ladleful of batter onto a hot pan. 

Step 4 : Swirl it once to make sure it is spread out. 

Step 5 : Cook for a minute before flipping over and continuing to cook. 

Making the Veg Stuffing: 

Step 1 : In a large wok, heat up 2 tablespoons of oil before sautéing 3 cloves of garlic, 2 chillies and 2 tablespoons of spring onion. 

Step 2 : Add ½ onion and stir fry on high flame. 

Step 3 : Throw in 1 carrot, 2 cups of cabbage, 5 beans and ½ capsicum. 

Step 4 : Stir fry everything together and season it with 2 tablespoons of vinegar, 2 tablespoons of soy sauce, 2 teaspoons of chilli sauce, ¼ teaspoon of pepper powder and ½ teaspoon of salt.

Folding & Frying the Spring Rolls:

Step 1 : Take a wrapper and place a tablespoon of the veg stuffing on it. 

Step 2 : Spread a teaspoon of maida paste around the edge to help seal the roll. 

Step 3 : Roll and fold the sides to ensure the roll is sealed tightly. 

Step 4 : Deep fry in hot oil, stirring occasionally until the roll turns golden brown and crisp. 

Step 5 : Drain off


NOTES:

Firstly, ensure the roll is sealed properly, or stuffing may come out while frying. For a healthier option, you can use wheat flour instead of maida. Additionally, fry on a low flame to ensure the roll is crunchy inside. Finally, the veg spring roll recipe tastes amazing when served hot and crispy!
