Primarily, you can observe a combination of two recipes with Chinese cuisine being the main influence. At the same time, it is not just Chinese recipes as most Singapore recipes use curry powder, which is also present in this recipe. So, I would call this a fusion of Indian and Chinese cuisine, given the cosmopolitan nature of Singapore city. Moreover, the addition of curry powder makes it appealing to Indian palates and thus it is widely accepted in most urban cities. I personally like it as a change, I make this recipe for my breakfast and sometimes dinner, which easily meets my needs.

INGREDIENTS:-
▢4 cup water
▢1 pack noodles
▢2 tbsp sesame oil
▢2 clove garlic (finely chopped)
▢1 inch ginger (finely chopped)
▢1 chilli (finely chopped)
▢4 tbsp spring onion (chopped)
▢½ onion (finely chopped)
▢1 carrot (julienne)
▢¼ cup cabbage (shredded)
▢¼ capsicum (chopped)
▢¼ tsp turmeric
▢¼ tsp kashmiri red chilli powder
▢½ tsp garam masala
▢½ tsp coriander powder
▢¼ tsp pepper
▢½ tsp salt
▢2 tbsp soy sauce
▢½ tsp sesame seeds (roasted)
INSTRUCTIONS:-
Step 1: Begin by heating up 2 tablespoons of sesame oil, then sauté 2 cloves of garlic, 1 inch of ginger, 1 chili, and 2 tablespoons of spring onion.
Step 2: Afterwards, saute a half of an onion until it changes color slightly.
Step 3: Next, add 1 carrot, a quarter cup of cabbage, and a quarter of a capsicum.
Step 4: Stir-fry the ingredients over high heat, making sure not to overcook the vegetables.
Step 5: In addition, add a quarter teaspoon of turmeric, a quarter teaspoon of chili powder, a half teaspoon of garam masala, a half teaspoon of coriander powder, a quarter teaspoon of pepper, and a half teaspoon of salt.
Step 6: Sauté the spices over low heat, being careful not to burn them.
Step 7: Now, add 2 tablespoons of soy sauce and mix everything together.
Step 8: Toss in the cooked noodles and mix until everything is evenly blended.
Step 9: Finally, enjoy your Singapore noodles topped with spring onions and roasted sesame seeds!
