INGREDIENTS:-

▢2 tbsp olive oil
▢1 onion (thinly sliced)
▢2 clove garlic
▢2 cup 400gm pumpkin, sliced
▢½ tsp salt
▢½ tsp pepper (crushed)
▢2 cup water
▢cream to garnish

INSTRUCTION:-

Step 1: Firstly, heat 2 tablespoons of olive oil in a large kadai. Alternatively, use any neutral flavoured oil or butter.

Step 2: Continue to saute 1 thinly sliced onion until it shrinks.

Step 3: Sauté 2 cloves of garlic as well.

Step 4: Add 2 cups (400gm) of sliced pumpkin. Any pumpkin will work.

Step 5: Add ½ tsp salt and 12 tsp pepper as well.

Step 6: Saute for a minute or two until it changes color.

Step 7: Additionally, add 2 cups of water and mix well.

Step 8: On a medium flame, cover and boil for 15 minutes.

Step 9: Allow the pumpkin to cool lightly after it has been cooked well.

Step 10: Blend to a smooth paste in a blender.

Step 11: In a bowl, pour the pumpkin soup and garnish with a tbsp of cream. If you are watching your weight, you can use greek yogurt instead of cream.

Step 12: Last but not least, serve pumpkin soup sprinkled with black pepper or keep it in the refrigerator for a week and enjoy whenever you want.

Notes:

  • firstly, if you have oven, then roast pumpkin, onion and garlic in oven for 30 minutes at 180 degree celsius. this helps to get roasted flavour in soup.
  • also add parsley, basil or rosemary for more flavours.
  • additionally, adding cream is optional, use greek yogurt if you are diet conscious.
  • finally, pumpkin soup can be extended by adding potato and carrot while boiling.
