But nothing beats the classic extra butter tossed red-coloured pav bhaji recipe. I haven't had the chance to try the famous Juhu Beach or Chowpaty Street style bhaji yet, but it is at the top of my wish list!

INGREDIENTS:-

for bhaji:

▢1 tbsp + 1 tbsp butter
▢3 tomato (finely chopped)
▢¼ cup peas / matar
▢½ capsicum (finely chopped)
▢2 potato (boiled & mashed)
▢1 tsp salt
▢1 tsp + ¼ tsp kashmiri red chilli powder / lal mirch powder
▢¼ tsp turmeric / haldi
▢1 tsp + ½ tsp pav bhaji masala
▢1 tsp + 1 tsp kasuri methi / dry fenugreek leaves
▢2 tbsp + 1 tbsp coriander leaves (finely chop ped)
▢1 tsp ginger garlic paste
▢1 onion (finely chopped)
▢½ lemon juice
▢3 drops red food colour (optional)
▢water to adjust consistency

to toast pav:

▢8 pav / bread roll
▢4 tsp butter
▢½ tsp kashmiri red chilli powder / lal mirch powder
▢½ tsp pav bhaji masala
▢4 tsp coriander leaves (finely chopped)


INSTRUCTIONS:-

Step 1 : Firstly, heat 1 tablespoon of butter in a large kadai and add vegetables. 

Step 2 : Cook and mash them until they are smooth.

Step 3 : Then, add 1 teaspoon of chilli powder, ¼ teaspoon of turmeric, 1 teaspoon of pav bhaji masala, 1 teaspoon of kasuri methi and 2 tablespoons of coriander leaves.

Step 4 : Next, heat a tablespoon of butter and add ¼ teaspoon of chilli powder, ½ teaspoon of pav bhaji masala, 1 teaspoon of kasuri methi, 

Step 5 : Also add,1 tablespoon of coriander leaves, 1 teaspoon of ginger garlic paste, 1 onion and ½ lemon juice. 

Step 6 : Saute everything until it is cooked through.

Step 7 : Now, add 3 drops of red food colour and stir it until it is combined.

Step 8 : Boil and mash the mixture for 5 minutes, adjusting the consistency as desired.

Step 9 : Finally, serve the pav and bhaji as pav bhaji, making sure it is unique and engaging.


NOTES:

Start by buttering for an authentic street flavour.
Include vegetables to up the nutrition content.
Mash the baji until you get a creamy texture.
