The term "tikka" primarily refers to anything that has been marinated before being baked, grilled, or fried. Similar to the dish served in restaurants, this delicious handmade version really, in my opinion, tastes better!
The yoghurt (curd) and Indian spice powders combine to create a delicious marinade that the spongy paneer cubes absorb. The paneer becomes slightly crunchier after being grilled on the skewers.
INGREDIENTS:-
For Marinade:
▢½ cup yogurt▢1 tbsp ginger garlic paste
▢1 tsp kasuri methi
▢1 tbsp mustard oil
▢Salt to taste
▢1 tsp carom seeds (ajwain)
▢1 tbsp roasted gram flour (besan)
▢1 tbsp degi mirch
▢1 tbsp Panchranga achaar paste
▢¼ tsp turmeric powder
▢½ cup green capsicum, cut in cubes
▢½ cup onions, cut in quarters
▢½ cup red bell peppers, cut in cubes
▢350 gms Paneer, cut in cubes
For Tikka:
▢1 tbsp mustard oil▢2 tbsp butter
▢Kasuri methi for garnish
▢Charcoal
▢1 tbsp ghee
INSTRUCTIONS:
Step 1: In a bowl, combine the yoghurt, ginger-garlic paste, kasuri methi, and mustard oil.
Step 2: Mix well after adding salt and carom seeds. Stir in the toasted gramme flour.
Step 3: Divide the prepared mixture into two portions. Add the degi mirch for Paneer Tikka to one portion and well combine.
Step 4: Place aside until needed.
Step 5: Add some turmeric powder and panchranga achaar paste for Achari Paneer Tikka to the remaining marinade and well combine.
Step 6: Green capsicum, onions, red bell peppers, and cubed paneer should be added to both marinades and mixed and coated.
Step 7: Vegetables and paneer should be skewer and stored until needed.
Step 8: Grill the prepared paneer tikka skewers on the grill pan with mustard oil and butter until they are browned.
Step 9: Cook from all sides while basting with butter.
Step 10: Transfer the cooked tikka to the serving plate, add ghee on top, cover the tikkas for two minutes to smoke, and then place hot coal in a bowl next to the tikka.
Step 11: Serve hot with your preferred dip, sauce, or chutney and garnish with kasuri methi.
Notes:
If the yoghurt isn't sour, squeeze in some lemon juice; if it is, use it as is. Any variety of Paneer Tikka can be prepared using this marinade.
