INGREDIENTS:- 

▢2 tbsp oil
▢1 tsp cumin seeds / jeera
▢1 medium sized onion (finely chopped)
▢salt to taste
▢1 green chilli (finely chopped)
▢1 tsp ginger-garlic paste / adrak lasun ka paste
▢½ tsp kashmiri red chilli powder / lal mirch powder
▢1 medium sized tomato (finely chopped)
▢¼ tsp turmeric / haldi
▢½ tsp garam masala powder
▢2 cup paneer / cottage cheese (crumbled)
▢1 tsp kasuri methi / dry fenugreek leaves (crushed)
▢2 tbsp coriander leaves (finely chopped)


INSTRUCTION:-

Step 1 : Start by heating oil in a kadai. Add cumin seeds, onions, green chilli, and ginger-garlic paste. 

Step 2 :  Saute until onions are golden. 

Step 3 : Next, add tomatoes and saute until soft and mushy. 

Step 4 :  Sprinkle in the spices - red chilli powder, turmeric, garam masala, and salt. 

Step 5 :  Simmer for a minute.

Step 6 : Stir in crumbled paneer or cottage cheese and mix gently without mashing. 

Step 7 : Simmer, covered, for 3 minutes.

Step 8 :  At the end, toss in kasuri methi and coriander leaves. 

Step 9 :  Mix everything together and serve paneer bhurji hot with chapathi or paratha.

Notes:

- Use fresh homemade paneer for juicy & flavourful bhurji.
- Substitute chili powder with pav bhaji masala for a more delicious taste.
- Add finely chopped capsicum for a pop of colour.
- Serve hot and slightly spicy for the best taste.
