Here, we've added a touch of ginger to the traditional carrot soup to elevate its flavour. For a richer flavour, you can add cream, sour cream, or cider - though this is optional.

For the best results, use fresh and juicy orange carrots to give your soup a bright colour. However, you can also use Indian red carrots if you'd like.

INGREDIENTS:- 

for pressure cooking:

▢2 tbsp olive oil
▢2 inch ginger (finely chopped)
▢½ onion (sliced)
▢3 carrot (chopped)
▢2½ cup water
▢½ tsp salt

other ingredients:

▢½ tsp mixed herbs
▢½ tsp pepper powder
▢¼ tsp salt
▢2 tbsp pumpkin seeds (for garnishing)
▢1 tsp mint / pudina (for garnishing)

INSTRUCATION:-

Step 1: Firstly, heat 2 tablespoons of olive oil in a pressure cooker, then add 2 inches of ginger and sauté.
 
Step 2: Add in ½ onion and cook until soft. 

Step 3: Next, add 3 carrots and sauté for 2 minutes. 

Step 4: Keep sautéing until the ginger is aromatic. 

Step 5: Pour in 2½ cups of water and ½ teaspoon of salt, then cover and pressure cook for 3 whistles. 

Step 6: Drain off and let it cool completely. 

Step 7: Put the cooked carrots into a blender to make a smooth puree. 

Step 8: Take the carrot puree into a large pan and add in the leftover water used for cooking the carrots. 

Step 9: Mix and boil, adjusting the consistency as needed.

Step 10:  Add in ½ teaspoon of mixed herbs, ½ teaspoon of pepper powder, and ¼ teaspoon of salt. 

Step 11: Finally, garnish the carrot ginger soup with 2 tablespoons of pumpkin seeds and 1 teaspoon of mint.

NOTES:

For consistency, adjust as needed. Serve with sour cream for an extra layer of richness.
Ginger adds amazing flavor to the soup.
Toss in extra veggies for added nutrition.
Finish off with a sprinkle of pepper for a truly delicious carrot ginger soup.
