This recipe is an easy and healthy way to get your kids to eat vegetables as it is full of nutrition and has an irresistible colour and texture. To make this veg cutlet, you can use a combination of vegetables like beans, carrots, peas, potatoes, beetroots, sweet corn and more. As a coating, I have chosen to use crushed corn flakes which gives it a golden brown colour and crunch. With step-by-step instructions, it's easy to make this veg cutlet recipe and enjoy as a snack or appetizer.


Preparing veg cutlet is a quick and easy task, but I'd like to give some helpful tips. You can use any combination of veggies in this recipe, so feel free to experiment! The shape of the cutlet can be customized to your preference; I've made it semi-cylindrical, but you can also use a patty shape. For the best results, deep fry the cutlets in hot oil in small batches, but shallow frying and pan frying are also valid options.

INGREDIENTS:

For pressure cooking:
2 Potato (peel & cube)
¼ cup carrot (cube)
¼ cup beans (chop)
¼ cup sweet corn
¼ cup peas
½ cup beetroot
¼ tsp salt

For cutlet:
¼ cup breadcrumbs 
½ tsp kashmiri 
¼ cup breadcrumbs
½ tsp kashmiri red chilli powder
¼ tsp cumin powder / jeera powder
¼ tsp garam masala
½ tsp aamchur / dry mango powder
1 tsp ginger garlic paste
2 tbsp coriander (finely chopped)
¼ tsp salt
1 cup corn flakes (crushed)
oil for deep frying

for corn flour batter:
3 tbsp corn flour
2 tbsp maida / plain flour
¼ tsp pepper (crushed)
¼ tsp salt
¼ cup water

INSTRUCTIONS

Follow these steps to make delicious veg cutlets:

Step 1 : Mash cooked vegetables until smooth and add ¼ cup breadcrumbs (or bread dipped in water).

Step 2 : Add ½ tsp chilli powder, ¼ tsp cumin powder, ¼ tsp garam masala, ½ tsp aamchur, 1 tsp ginger garlic paste, 2 tbsp coriander and ¼ tsp salt, combining them all into a dough.

Step 3 : Prepare a corn flour batter by mixing 3 tbsp corn flour, 2 tbsp maida, ¼ tsp pepper and ¼ tsp salt. Then, add ¼ cup water and mix until a smooth, lump-free batter is formed.

Step 4 : Take a ball-sized portion of the vegetable mixture and roll it into a cylindrical shape, greasing your hands with oil as necessary.

Step 5 : Dip the veggie cylinder into the corn flour batter, then coat it with crushed corn flakes or breadcrumbs.

Step 6 : Heat oil in a pot or preheat an oven to 180° Celsius, then deep fry or bake the veg cutlet for 15-20 minutes, stirring occasionally, until golden and crisp.

Step 7 : Serve the veg cutlet with tomato sauce and enjoy!

NOTES:

Firstly, make sure to add breadcrumbs to the vegetable mixture to prevent the cutlet from breaking in oil. 
In addition, choose vegetables of your choice to add more nourishment and flavor to the veggie cutlet. 
Also, avoid adding any water while cooking the vegetables as they will become mushy. 
Finally, the veg cutlet recipe is best when prepared with a variety of vegetables and is served crispy.
